Ingredients
12 La Piedad Taquito Size Corn Tortillas
2 cups cooked chicken, shredded
1 cup shredded Monterey Jack or Mexican-blend cheese
½ cup finely diced onion
1 teaspoon garlic powder
1 teaspoon ground cumin
½ teaspoon chili powder
½ teaspoon salt
Vegetable oil, for frying
Fresh cilantro, for garnish
Lime wedges, for serving
For Serving
Salsa
Guacamole
Sour cream
Pico de gallo
Instructions
In a large bowl, combine the shredded chicken, cheese, onion, garlic powder, cumin, chili powder, and salt. Mix until evenly combined.
Warm the La Piedad Corn Tortillas briefly until soft and flexible. This will make them easier to roll without cracking.
Place approximately 2 tablespoons of chicken filling near one edge of each tortilla. Roll tightly around the filling and place seam-side down.
Heat about ½ inch of vegetable oil in a large skillet over medium heat.
Working in batches, carefully place the taquitos seam-side down in the hot oil. Fry, turning as needed, until crisp and golden brown on all sides, about 3–5 minutes.
Transfer to a paper-towel-lined plate and allow any excess oil to drain.
Serve warm with salsa, guacamole, sour cream, pico de gallo, fresh cilantro, and lime wedges.
