La Piedad Fajitas

Bring bold, fresh flavor to the table with these classic La Piedad Fajitas. Made with your choice of seasoned chicken or beef, sautéed onions, tomatoes, bell peppers, and fresh cilantro, this recipe is perfect for family dinners, gatherings, or an easy Mexican-inspired meal served with warm La Piedad Tortillas.



Ingredients

  • 2 lbs. cut-up chicken pieces or sliced beef

  • Carne Asada-style seasoning, to taste

  • 1 teaspoon salt, or to desired taste

  • 1 teaspoon lemon pepper, or to desired taste

  • 2 brown onions

  • 4 tomatoes

  • 1 bell pepper

  • 1 cup cilantro sprigs

  • 1 cup green chiles or jalapeños (optional)

  • 2 tablespoons oil

  • 1 package La Piedad Tortillas


Cold Toppings

  • 1 cup sour cream

  • 1 cup fresh salsa

  • ½ cup grated Monterey Jack cheese

  • ½ cup grated Cheddar cheese


Instructions

  1. Peel the onions and slice them into approximately ¼-inch rounds, then cut the rounds in half.

  2. Heat the oil in a large frying pan over medium-high heat. Add the onions and chicken or beef. Season with Carne Asada-style seasoning, salt, and lemon pepper. Cook, stirring occasionally, until the meat is fully cooked and lightly browned.

  3. Cut the tomatoes into quarters. Slice the bell pepper into approximately ¼-inch strips and cut the strips in half.

  4. Add the tomatoes, bell pepper, cilantro, and optional green chiles or jalapeños to a separate frying pan over medium heat. Cook, stirring occasionally, until the vegetables are tender and lightly browned.

  5. Combine the cooked meat and vegetables and transfer to a preheated cast-iron skillet or serving pan to keep everything warm.

  6. Warm the La Piedad Tortillas according to the package directions.

  7. Spoon a generous portion of the fajita mixture into the center of each warm tortilla. Top with sour cream, fresh salsa, Monterey Jack cheese, and Cheddar cheese as desired.

  8. Fold the tortillas around the filling and serve immediately.


Yield: Approximately 6 fajitas
