When you need something fast, these Crispy Chicken & Cheese Quesadillas come together in minutes. Tender seasoned chicken and plenty of melted cheese are folded inside soft La Piedad Flour Tortillas and toasted until golden and crispy.


They’re perfect for busy weeknights, quick lunches, after-school snacks, or an easy meal the whole family can customize.

Ingredients

  • 4 La Piedad Flour Tortillas

  • 2 cups cooked chicken, shredded or diced

  • 2 cups shredded Monterey Jack or Mexican-blend cheese

  • ½ cup diced bell pepper

  • ¼ cup diced onion

  • 1 teaspoon taco seasoning

  • 1 tablespoon vegetable oil or butter

  • Fresh cilantro, optional

  • Lime wedges, for serving


For Serving

  • Salsa or pico de gallo

  • Sour cream or Mexican crema

  • Guacamole

  • Sliced jalapeños


Crispy Chicken & Cheese Quesadillas Instructions

  1. Prepare the filling. Combine the cooked chicken with taco seasoning. If using leftover or rotisserie chicken, warm it briefly before assembling the quesadillas.

  2. Build the quesadillas. Place a La Piedad Flour Tortilla on a flat surface. Sprinkle cheese over one half, then layer with chicken, bell pepper, onion, and a little more cheese.

  3. Fold. Fold the tortilla in half over the filling and gently press it together.

  4. Cook until crispy. Heat a small amount of oil or butter in a skillet over medium heat. Cook each quesadilla for about 2–3 minutes per side, until the tortilla is golden and crispy and the cheese is completely melted.

  5. Slice and serve. Let the quesadillas rest for about a minute before slicing into wedges.

  6. Serve warm with salsa, sour cream, guacamole, jalapeños, and lime wedges.


Quick & Easy Tip

Use leftover chicken or a store-bought rotisserie chicken to make this an even faster meal. You can also prepare the filling ahead of time and assemble the quesadillas when you're ready to eat.

Swap the chicken for seasoned ground beef, steak, black beans, or sautéed vegetables. Add corn, spinach, jalapeños, or your favorite cheese to create your own combination.
