Warm, comforting, and packed with flavor, these Cheesy Chicken Enchiladas combine tender seasoned chicken, melted cheese, savory enchilada sauce, and La Piedad Corn Tortillas. Baked until bubbly and golden, they’re perfect for weeknight dinners, family gatherings, meal prep, and sharing around the table.

Ingredients

  • 12 La Piedad Corn Tortillas

  • 3 cups cooked chicken, shredded

  • 2 cups shredded Monterey Jack or Mexican-blend cheese, divided

  • 2 cups red enchilada sauce, divided

  • ½ cup diced onion

  • 1 teaspoon ground cumin

  • ½ teaspoon garlic powder

  • ½ teaspoon chili powder

  • Salt and black pepper, to taste

  • 1 tablespoon oil

  • Fresh cilantro, for garnish


Optional Toppings

  • Sour cream or Mexican crema

  • Diced tomatoes

  • Sliced avocado

  • Pico de gallo

  • Sliced jalapeños

  • Crumbled queso fresco

  • Lime wedges


Cheesy Chicken Enchiladas Instructions

  1. Preheat the oven to 375°F. Lightly grease a 9 × 13-inch baking dish and spread approximately ½ cup of enchilada sauce across the bottom.

  2. Combine the shredded chicken, onion, cumin, garlic powder, chili powder, salt, pepper, and 1 cup of shredded cheese in a large bowl.

  3. Warm the La Piedad Corn Tortillas until soft and flexible. This helps prevent them from cracking while rolling.

  4. Spoon the chicken mixture down the center of each tortilla. Roll tightly and place seam-side down in the prepared baking dish.

  5. Arrange the enchiladas closely together in a single layer.

  6. Pour the remaining enchilada sauce evenly over the tortillas and sprinkle the remaining cheese across the top.

  7. Bake uncovered for approximately 20–25 minutes, or until the sauce is bubbling and the cheese is completely melted.

  8. Remove from the oven and allow the enchiladas to rest for about 5 minutes.

  9. Garnish with fresh cilantro and serve with your favorite toppings.


Make It Your Own

Swap the chicken for seasoned ground beef, shredded beef, beans, or roasted vegetables. You can also add corn, black beans, green chiles, or jalapeños to the filling for even more flavor.
